Ghana and the Netherlands
Ghana and the Netherlands share a long history of cocoa production and export. The Netherlands is the world’s largest processor of cacao, and Amsterdam is the world’s largest storage and transshipment port for Ghanaian cocoa. Several Dutch trading companies work closely with Ghanaian cocoa producers.
Historically, it was a Dutch chemist and chocolatier in Ghana who made a particularly important contribution to chocolate production. Coenraad Johannes van Houten (1801-1887) developed methods to make the cocoa mass less bitter and dry and to extract cocoa butter from roasted cocoa beans.
